It is larger than most other stone holders and can fit stones both with and without bases. This version comes with a large plastic base that is designed to keep the water and swarf from sharpening from spreading all over your counter top. Also, it comes with two additional pieces that give a little bit more stone height and knuckle clearance. The additional pieces also allow for you to mount your stone at a slight angle, just like traditional knife sharpeners do in Japan. We hope you like this as much as we do.

The stone holder can exhibit a strong rubber smell in the beginning, but this does go away with some time. Washing can also help.

Length: 340mm

Height: 60mm

Width: 170mm

Product Description

Detailed Specs

Measurements

This 150 grit diamond flattening plate is used to keep your stones flat and in good condition. class="active">

The diamond 300A stone is a 300 grit diamond stone. Unlike diamond plates, these stones are constructed in a manner more similar to normal waterstones. The top ~5mm of the stone is composed of a hard binding agent with diamond abrasive mixed in. This is then attached to a taller base, such that the whole item together is about the same size as many of the other stones we sell. Unlike some diamond stones that use metal or aluminum bases, this base is a lightweight, water resistant plastic, which I have found to be lighter and more convenient to use and care for than other bases.

With regard to the stone, we have spent a significant amount of time working with the maker to find the right balance of cutting power, tactile feedback, and resistance to dishing. Coarse stones tend to get the brunt of work when repairing knives or trying to get through sharpening more quickly. This stone is rather fast cutting, though it is not particularly muddy. I use this stone to remove deep 150 grit scratches, which it does with ease, rather quickly. The scratch pattern it leaves is very consistent and even, and, again, unlike diamond plates with the abrasives plated onto the surface, these stones leave scratches with a depth more similar to regular sharpening stones. Thanks to their diamond abrasive, they work well on all steel types, including some of the most hard and wear resistant steel. They can even be used to sharpen ceramic knives. As the binding agent is not porous, these stones are true splash and go stones.

This diamond stone does dish a bit faster than some other diamond stones, which is why we have it in a thicker stock, and also include a special flattening device for flattening these types of stones. That being said, it still dishes very slowly, and after over a year of heavy use, I have worn through less than 20% of the stone. As a comparison, in the same time frame, I was able to wear completely through a different type of diamond stone, and multiple ceramic and resinoid-based stones. When using the flattening stone, work the high spots down by rubbing those areas in a circular motion.

<li Since starting to use these a few years ago, they quickly became my favorite. I believe that most professional sharpeners are always on a quest for the best coarse stone they can find, but its always hard to find the perfect coarse stone. This one comes as close as any I have tried. While its not as fast as our Gesshin 220, it is as fast cutting as many 320-400 grit stones. However, being 800 grit, it fits within the medium grit range (naka toishi). The scratches it leaves are not as deep as those from the coarser stones I would normally start with. This allows me to jump directly from this stone to my finishing stones, cutting my sharpening time drastically. For example, a common 2 stone set up in our workshop might include this 800 grit stone and any one of our 3000-8000 grit stones (most often, it ends up being one of our 6000 grit stones).

Unlike other diamond stones found commonly in the market, this stone acts more like the traditional soaking stones many are used to. It is porous and actually soaks in water while providing a more traditional whetstone feel. Because it is extremely thin, it soaks rather quickly (in just a few seconds), so despite not being technically splash-and-go, it is probably the closest one can get.

As you can see in the picture, the stone is mounted on a glass plate. The stone itself is only about 3mm thick. However, the stone is extremely slow-wearing, and does not need flattening often. As a preventative measure, one should sharpen as evenly as possible on the surface of this stone to prolong flattening intervals as they can be rather tedious, time-consuming, and detrimental to some flattening devices; do not use diamond flattening plates. The most effective device for conditioning and flattening is the pink Gesshin Extra Large Stone Fixer. Also, this stone is particularly aggressive on soft stainless cladding and may leave deeper scratches when cutting on soft stainless cladding. There are sometimes small imperfections around the perimeter of the stone, but these do not affect the performance of the stone. First and foremost, this is a stone we use here as a tool, and, while we had initially never intended for this to be a product we sell, due to high demand, we started producing them for sale as well. The company who manufacturers these does not specialize in hand stone manufacturing, and this has always been a special request from us to them.

All in all, this is probably my favorite stone of all of the ones I own.

Grit Level: Medium/Coarse

Length: 211mm (may be mounted on a slightly larger piece of glass)

Height: 3mm (15.4mm including glass mounting)

Width: 78mm (may be mounted on a slightly larger piece of glass)

Weight: 626g

Product Description

Detailed Specs

Measurements

During a recent trip to Japan, I was talking with a stone company that we are close with out there, and the owner and I got into an in depth discussion about the beginning of his career as a stone maker. When he first started, he began by making magnesia based stones that were entirely splash and go. Since that time, he had moved on to different stone constructions. A little while back, he found a small supply of some older stones he had made. While I was there, I got to play around with them a bit, and even got some to use when I returned to work. I enjoyed using them quite a bit, and thought some of you might enjoy them too. Because the supply of these stones (which are not being made anymore) is very limited, these will not last forever.

This stone is entirely splash and go, and should not be soaked at all. It is on the harder side of things, but not super hard. I've had good results on both single bevel and double bevel knives, and the cutting speed is rather good too. The finish from the maido stones is more polished than misty. They also resist dishing very well. We also recommend using a stone holder (like our large stone holder) in conjunction with the sink bridge.

Length: 413mm

Height: 32mm

Width: 100mm

Product Description

Detailed Specs

Measurements

This is a traditional stone fixer, like those that are commonly used in Japan. Originally, this was introduced to me as a way to use a pull-through sharpener and still get an effective edge for people that weren't interested in learning how to sharpen. However, in testing it out over the better part of a year, it ended up being a very effective tool for finishing edges. Not everyone will like the edge feel after a strop, as it tends to be a little bit more smooth. However, for those who like it, this is a really easy device to use. All you have to do is hang it on something stable, pull the other end to keep the strop taught, and use edge trailing strokes across the leather. You can use it with or without the green compound. However, these devices tend to be significantly more effective when loaded up with some kind of compound.

The felt polishing block can also be loaded up with the compound for your various polishing tasks. Additionally, the felt can be used for burr removal if you so choose.

We have tested this on a wide variety of blades, and a wide variety of steels, as well as following various sharpening methods. I was truly shocked to see the kind of edge that would result from a pull-through sharpener followed up by this. I don't recommend pull-through sharpeners, but the results were still surprising. are extremely slow to dish (I've flattened mine about once per year of use) and leave smooth and even finishes. The edge from the 3000 grit leaves a toothy edge that is great for meats and thick-skinned vegetables and fruits, and can easily be used to follow up any medium grit stone, as well as some finer coarse stones. The nagura should be used from time to time to help expose fresh should still be used as a splash and go stone. It, like the other Monzento we carry, is a medium grit stone. It's a medium hardness, but a bit softer than the other Monzento we have in stock. It develops mud very easily and leaves a nice kasumi finish with well-defined and deep contrast. The color of the finish is really nice too. This is a great place to start if you're looking to have a very strong kasumi when you get to your finishing stone. It fits in the 1000-2000 grit range, so there will be a visible scratch pattern, but it's not harsh. The tactile feel was rather nice... there was slight resistance, but still smooth and creamy feeling.

As an added pleasure, this stone releases a strong and pleasant fragrance when used. The color of the finish is really nice too. This is a great place to start if you're looking to have a very strong kasumi when you get to your finishing stone. It fits in the 1000-2000 grit range, so there will be a visible scratch pattern, but it's not harsh.
