The blacksmiths, sharpeners, and even the lacquer-ware craftsmen are all amazingly skilled, as can clearly be seen by simply looking at the knives. In fact, all of the craftsmen are certified craftsmen or dentou-kougeishi (a very prestigious honor). These knives have amazing fit and finish, spectacular grinds, some of the most beautiful handles and saya we've seen on Japanese knives, and amazing geometry. They are really thin behind the edge, have great distal taper, and have wide bevels, making them easier to thin and sharpen. The lacquer craftsmen use real lacquer on these, not the synthetic lacquer more commonly used. Even the boxes are beautiful lacquer-ware. The high-quality construction includes a blue #1 hagane and a soft iron jigane. The grind of the knife is finished off very well to the exclusion of the many large high-and-low spots common on more affordable single bevel knives. This means that each subsequent sharpening that is done to this knife will be off to a good start. The spine and choil are polished and the choil is rounded off to relieve you of any uncomfortable hotspots. The blade is thin relative to many other deba and as such will be more nimble and lightweight in the hand. The high-quality construction includes a blue #1 hagane and a soft iron jigane. The grind of the knife is finished off very well to the exclusion of the many large high-and-low spots common on more affordable single bevel knives. This means that each subsequent sharpening that is done to this knife will be off to a good start. This 210mm version pairs a kiritsuke-shaped tip with a clad Blue #1 carbon steel blade.

Knife Type: Kiritsuke-Shaped Gyuto

Steel Type: Blue #1 Carbon

Handle Type: Octagonal Lacquered Ho Wood

Construction Type: Carbon Clad

Hand Orientation: Ambidextrous

Handle Length: 136mm

Handle Height: 25.9mm

Handle Width: 22.2mm

Handle to Tip Length: 212mm

Heel to Tip Length: 197mm

Width of Spine at Middle: 2.56mm

Width of Spine 1cm from the Tip: 0.65mm

Width of Spine at Handle: 3.51mm

Width of Spine above Heel: 3.25mm

Blade Thickness 1/2 way between the Spine and Edge: 2.88mm

Blade Height at Heel: 45mm

Weight: 170.3g

//cdn.shopify.com/s/files/1/0994/0120/files/Gesshin_Kagekiyo_210mm_Blue_1_Kiritsuke_Wa-Gyuto-front.jpg?v=1790900794
